Tzatziki

Probably the single most popular Greek dip!

Tzatziki

Ingredients


300 g Greek yogurt (we recommend Total full fat, but any well strained yogurt will do/ runny yogurts will not give you the right texture in your dip)

1 big cucumber

1/3 of a garlic clove, finely minced (or more if you're fierce)

2 tablespoons white wine vinegar 

1/2 bunch dill, finely chopped

1/2 bunch mint, finely chopped

3 tablespoons olive oil

salt - white pepper


Method


Peel the cucumber and grate with a cheese grater, using the large blades side. Put in a bowl, add a pinch of salt and let it aside to drain its liquids.

Mix the yogurt, the garlic, the vinegar and olive oil until fully combined and yogurt is creamy. Squeeze the cucumber with your hands to release any remaining liquid. Discard* the liquid, add the cucumber to the yogurt mixture and stir. Add the white pepper and salt according to your taste. Add some finely chopped dill and your sauce is ready. Refrigerate until needed. Serve it with some warm Greek or Cypriot pitta bread.

*you can keep the cucumber liquid and add into your G&T along with some mint for a refreshing flavour or mix with other fruits for a smoothie.
